How to make Dum Aloo Recipe or Spicy Potato Curry?

Dum Aloo Recipe (दम आलू) or Spicy Potato Curry:-

Ingredients for Dum Aloo Recipe (दम आलू) or Spicy Potato Curry-

  • 500 grams small potatoes (500 ग्राम छोटे आलू)
  • 1 medium sized onion(1 मध्यम आकार के प्याज)
  • 3 big bay leaves(3 बड़े बे पत्तियों)
  • 2 cups curd(2 कप दही)
  • 1/2cup milk(1 / 2cup दूध)
  • 1 teaspoon ginger garlic paste(1 चम्मच अदरक लहसुन पेस्ट)
  • 1 tablespoon coriander seeds(1 चम्मच धनिया के बीज)
  • 3 cardamoms, 3 cloves(3 इलायची, 3 लौंग)
  • 6-7 black pepper(6-7 काली मिर्च)
  • 1 small stick cinnamon(1 छोटा छड़ी दालचीनी)
  • 1/4 teaspoon caraway seeds(v)
  • 1/2 teaspoon turmeric(1/2 चम्मच हल्दी)
  • 1 pinch asafoetida(1 चुटकी हींग)
  • 1 teaspoon chilly powder(1 चम्मच मिर्च पाउडर)
  • 4 tablespoons oil/ghee and salt to taste(4 बड़े चम्मच तेल / घी और नमक स्वाद के लिए)


How to Prepare Dum Aloo Recipe (दम आलू) or Spicy Potato Curry :-

First grate the onion and keep it aside, you have to beat the curd (yoghurt) also. Now take all the spices and dry grind it in grinder till it’s become fine powder. Peel the small size potatoes and take a fork and prick it nicely and on all side,now take a Pan Pour the oil in and put the potatoes inside and fry them in oil till they turn golden brown now release and let it cool. you can put the fried potatoes on paper to absorb the extra oil Now take another pan and pour some oil and bring to heat. now you have to add the bay leaves, asafoetida, ginger garlic paste, grated onion and sauté till the raw smell leaves. you will see slowly the paste will turn a dark brown. This will give the gravy its colour and so let it be a nice dark brown. now you have to add the mixed spice powder we made. Sauté it for a minute and add turmeric, chilly powder and salt in it. Sauté for a minute till the smell of the spices fades and an aroma begins to rise. now you have to add the milk and then slowly stirring continuously add the curd. now add the fried potatoes add water if required and pressure cook it for five minutes you have to ensure that you take it off the flame before the first whistle blows. Now Our Dum Aloo or Spicy Potato Curry is ready to serve.
