Palak omlette
Ingredients: – 2 eggs, 1 small bunch palak(spinach), 1 small onion, 1 small tomato, 1 big green chilly, ¼ teaspoon grated ginger, 2 garlic cloves, 1 tablespoon oil and salt to taste.

HOW TO PREPARE: – Take a bowl and beat the eggs with ¼ teaspoon salt. Now take a tava and apply some oil on it. When the oil is very hot pour the egg on the tava and roll the tava so that the egg spreads over evenly. When one side is done flip over and let the other side get cooked too. Remove from flame and cut the omlette into small squares. Take a pressure cooker and put in only the leafy part of the spinach. Add a little water and salt and cook for a whistle or two. Remove from the cooker and drain completely and let it cool. When it is cool put it in a blender with the green chilly, garlic and grated ginger and make a fine paste. Now take a frying pan and heat up the remaining oil. When it is very hot add the chopped onions and sauté till they are deep brown add the tomatoes and the spinach paste. Sauté till the oil begins to leave the edges of the pan. When the gravy is as thick as you want, add the omlette squares and cook for another two minutes so that the taste of the gravy gets into the omlette too. Remove from flame and serve with a little fresh cream or butter.
Egg Manchurian
Ingredients : – 6 eggs hard boiled, 3 onions, 6 green chillies, 1 tablespoon corn flour, 1 tablespoon vinegar, 2 tablespoons soya sauce, ¼ tablespoon sugar, oil for frying and salt to taste.
Preparation time :- 12 minutes Serves : – 2
HOW TO PREPARE : – Slice the onions length wise into nice thick pieces. Slit the green chillies into half and keep it aside. Take a small bowl and add the corn flour. Add very little water and make a smooth paste. Now take a frying pan and heat three tablespoons oil. When the oil is very hot add the onions and sauté till golden brown. Now add the corn flour paste, soya sauce, vinegar, sugar and salt to taste and mix it all well. Now sauté till an aroma begins to rise. Now cut the eggs into halves length wise and add it to the paste. Add the green chillies too and bring to boil. Simmer and cook for two minutes. Remove from heat and serve.
