Ingredients : - 1cup raw rice, 1 big dry red chillies, 1 pinch asafoetida, 1 sprig curry leaves, ½ teaspoon mustard seeds, ½ teaspoon black gram, ½ teaspoon Bengal gram, lemon sized tamarind, 1 cup water , 2 tablespoons oil and salt to taste. Preparation time : - 30 minutes Serves : - 2 HOW TO PREPARE : - Soak rice for an hour. Soak the tamarind in half cup water. Drain the water completely. Grind it one by two in a blender. Now take a frying pan and pour the oil. When the oil is hot add the mustard seeds and red chillies and let them crackle. Add the curry leaves, asafoetida, black gram and Bengal gram. Strain the tamarind and add the tamarind water to the pan and stir well. Add the ground rice and sauté for a while. Add water according to desire. Cover with a lid, simmer and cook. Check at regular intervals if there is enough water and is the rice cooked. Since its ground rice it may be quick to stick to the bottom and so keep stirring on and off. Serve hot with pudina chutney.
Ingredients : - 2 cups cooked rice, 3 tablespoons grated coconut, 1 teaspoon pepper powder, 3 green chillies, 1 small onion, few curry leaves, 1 teaspoon black gram, 1 teaspoon Bengal gram, 1 teaspoon mustard seeds, ½ teaspoon cumin seeds, 2 tablespoons oil and salt to taste. Preparation time : - 7 minutes Serves : - 2 HOW TO PREPARE : - Take frying pan and pour the oil. When the oil is well heated add mustard seeds and let it crackle. Then add the black gram, Bengal gram and cumin seeds. Next put in the curry leaves and green chillies. Next add the chopped onions and sauté till its golden brown. Add the pepper and add the grated coconut and turn off the flame. Add the salt and then put in the rice. Mix it up well and serve hot.
Ingredients : - 1 cup basmati rice, ½ cup green peas, 1 onion, 2 green chillies, ½ cup grated cheese, 1 bay leaf, 2 cups water, 2 cloves, few pepper corns, 1 inch cinnamon stick, 2 tablespoons oil and salt to taste. Preparation time : - 20 minutes Serves : - 2 HOW TO PREPARE : - Cut the onion into thin long slices. Mince the green chillies and set it aside. Take a pan and pour the oil. Bring to heat and when it’s nice and hot add the cloves, bay leaf, cinnamon, green chillies, pepper corns and sauté briefly. Then put in the onions and sauté till the raw smell leaves. Put in the peas, rice and mix it up well. Add the water and cover with a tight lid and cook till the rice is ready. Garnish with the grated cheese and serve hot.
Ingredients : - 1 cup rice, 1 cup sliced mushrooms, ½ teaspoon red pepper flakes, 1 teaspoon oregano leaves, 1 teaspoon parsley flakes, 2 cups water, ½ cup minced onion, 2 teaspoons margarine and salt to taste. Preparation time : - 20 minutes Serves : - 2 HOW TO PREPARE : - Take a frying pan and put the margarine. Let it melt and when it’s hot add the onions and sauté. Let the onions turn a nice dark brown and then add pepper flakes, oregano leaves, parsley flakes. Add the rice and mushroom. Pour the two cups water and bring to boil. When it begins boiling, cover the pan with a lid and cook till the rice is done. Remove from flame and with the help of a fork separate all the grains. Serve in a big plate and garnish with fried cashew nuts.
Ingredients : - 1 cup rice, 1 cup toor dal, 1 whole garlic bulb, 2 cloves, 1/2inch cinnamon, 1 teaspoon sugar, ½ bunch coriander leaves, 3 green chillies, 1 onion, 2 tablespoons ghee and salt to taste. Preparation time : - 35 minutes Serves : - 2 HOW TO PREPARE : - Soak the dal for at least an hour. Take a blender and add the onion (cut it into small pieces), cloves, cinnamon, coriander leaves, chillies, garlic and make a paste. Now take a frying pan and put the ghee and bring to heat. When its hot and is bubbling add the paste and sauté till the raw smell leaves. This may take some time. Then add the salt and dal and stir well. Follow this with the rice. Sauté for two minutes and then transfer this entire mix into a rice cooker. Pour three cups of water and cook till the rice is ready. Pour some ghee on the rice and serve hot.
Ingredients : - 2 cups cooked rice, 1 medium sized onion, ½ cup peas, few coriander leaves, ½ teaspoon mustard seeds, ½ teaspoon cumin seeds, 3 minced green chillies, 3 garlic flakes, 1 tablespoon oil and salt to taste. Preparation time : - 10 minutes Serves : - 2 HOW TO PREPARE : - Peel the onion and then cut it into thin long slices. Take a frying pan and add the oil and bring to heat. When the oil is nice and hot add the mustard seeds and let it crackle. Then add the cumin seeds and sauté till it turn golden brown. Put in the green chillies and onions and sauté till the onions are soft and turn golden brown. Add the peas, pour a little water and let the peas get cooked in it. Once the water evaporates turn of the flame. Add the rice, salt to taste and coriander leaves and mix it up well and serve. |
